Beta-glucans are polysaccharides from mushroom cell walls, and their structure matters – the 1,3 bonds (backbone) and 1,6 bonds (branches). Mushroom beta-glucans have rich 1,3/1,6 branching, i.e. the full spectrum. Yeast ones (from Saccharomyces) have simpler 1,6 branches. We work with fruiting-body extracts, not mycelium on grain.

Why a wooden spoon

Our honey is a tradition we scoop with a wooden spoon – it does not scratch the glass jar and serves as a precise measure of the daily dose. Do not store honey in a metal container, especially not galvanized, iron or copper.

We include a wooden spoon free with the large jar. With the small jar we recommend adding one.

What science says

No one has measured the brief contact of a metal spoon with honey. What we know from the available studies:

  • Honey stored for 12 months in a tin can had the same enzymes and HMF as honey in glass (Yiğit 2024).
  • A brief spoon contact accounts for less than 1 % of the nickel you take in daily from normal food (EFSA).
  • It matters with a nickel allergy (the most common contact allergy, more often in women) – then inert wood is the safer choice.

Composition and use

Dosage

Using our wooden spoon, the recommended daily dose is 1½ spoons (9 g).

Take it straight off the spoon or dissolved in lukewarm water, lukewarm tea or a probiotic drink (kombucha, water kefir). Never in hot coffee or tea, our honey is raw and above 38 °C it loses enzymes and some of the active compounds.

There are no restrictions for short-term use. For long-term use (more than a year), an occasional break is recommended: after 1 year of use, a 1 to 2 week break; after 2 years of daily use, 4 weeks.
